Chocolate Mud Pie

I've been experimenting with different recipes and made this one last night. Brock has declared it as his favorite of the favorites:

Chocolate Mud Pie
It has gooey chocolate cake and yummy chocolate sauce all in one! Yum!

1/2 cup flour
1/4 cup granulated sugar
1 Tablespoon unsweetened cocoa powder
1/8 teaspoon salt
1 teaspoon baking soda
1/4 cup fat-free milk
1 Tablespoon canola oil
1/2 teaspoon vanilla
1/4 cup chopped walnuts (optional)
3 Tablespoons packed brown sugar
2 Tablespoons unsweetened cocoa powder
2/3 cup water
Fresh berries (optional)
Vanilla ice cream or yogurt (optional)

1. Turn on over to 350. Lightly coat a 9-inch pie plate with cooking spray.
2. Put the flour, granulated sugar, 1 T. cocoa powder, and salt in a med. bowl. Stir with spoon to mix. Stir in the milk, oil, and vanilla, and walnuts if you like them.
3. Pour batter into prepared pie plate. Put the brown sugar and the 2 T. cocoa powder in a small bowl. Stir with spoon to mix. Put the water in a glass measuring bowl and put it in the microwave and cook on high for about a minute or until bubbly. Take from the microwave and carefully stir the water into the brown sugar mixture. Slowly pour brown sugar mixture over batter in pie plate.
4. Put the pie plate in the oven and bake for 20 minutes. Cool for 20 minutes and serve warm with berries and scoops of ice cream if desired.
Makes 6 servings. 127 calories per serving. 3 g fat, 0 cholesterol, 117 mg sodium, 25 g carbohydrates, 16 g sugar, 1 g fiber, 2 g protein.

Learning to Ski!

For Christmas, we got the kids skiing lessons. This past Saturday was their first lesson. The program here is so great...they have 2-hour lessons every Saturday for the next eight weeks. Dad goes up with them and helps teach (he came home and slept for 2 hours!)...what an amazing dad they have!! They had a very fun time and are looking forward to more time on the slopes!

Happy New Year 2010!!

We went down south to visit cousins for New Years! It was soooo much fun!
The weather was perfect, the food was amazing (Aunt Riss sure can cook!), and the entertainment was out-of-this-world! We're grateful for family members who are also some of our very best friends!

If this is any sign of how 2010 is going to be, it's going to a very good year!

Uncle Charlie and Aunt Angie got us frogs for Christmas. We love them!! They really are some of our favorite things. We just got done reading Where the Red Fern Grows and decided to name the frogs after the dogs in the book: Little Ann and Big Dan!
